Welcome to the Wonderful World of Sourdough!

Congratulations on acquiring your sourdough starter – the living, breathing heart of incredible homemade bread! This guide will walk you through everything you need to know to bring your starter to life, keep it healthy and active, and recognize when it's perfectly ripe for baking.

If your starter is active:

Acclimation: Your starter is already alive and kicking! Carefully transfer it to a clean glass jar.

First Feeding: Even if it's active, it's good practice to give it a fresh meal to acclimate it to its new environment and your flour. Discard all but 1-2 tablespoons of the starter. To the remaining starter, add:

  • 50g (approximately 1/4 cup) warm filtered water
  • 50g (approximately 1/2 cup) unbleached bread flour

Mix and Observe: Stir well, cover loosely, and let it sit at room temperature. You should start seeing activity within 1-4 hours.

Regular Feeding: Proceed with feeding at least a 1:1:1 ratio of Starter:Flour:Water all the way up 10:10:10 ratio if your starter is weak. The golden rule is always feed equal parts flour & water
